Cheese-making from The Start:
Starting at 8:45 AM, this immersive tour offers an exclusive behind-the-scenes look at the entire cheese-making process. You’ll witness the early stages of production, including the extraction of the cheese wheel, led by our skilled casari (cheesemakers). After exploring the art of traditional cheese-making, delight your palate with a guided tasting of various aged Parmigiano Reggiano, freshly made ricotta, seasonal fruits, grissini, and refreshing water. From April to September, the tour extends to our picturesque farm, where you’ll be greeted by our adorable calves, adding a touch of countryside charm to your visit.
With the Cheesemakers & Tasting:
Perfect for those with limited time or a focus on the tasting aspect, this tour begins at 10:30 AM and skips the initial stages of production. Instead, our master cheesemakers, Silvia and Maurizio, provide an in-depth explanation inside the cheese production rooms. You’ll observe the cutting of a full cheese wheel, followed by a delicious tasting of different Parmigiano Reggiano maturations, along with fresh ricotta, seasonal fruits, grissini, and water. Like the Full Experience, this tour also offers the chance to meet our young calves at the farm between April and September.
