Your journey begins with a guided tour through our family-owned vineyards, where you’ll learn about the local terroir and its influence on the grapes. From the fields, we’ll take you into the heart of production, starting with the cooking of grape must. This step is essential in concentrating the sugars that give Balsamic Vinegar its distinctive flavor. You’ll then explore our aging rooms, featuring traditional wooden barrels made from oak, cherry, and other fine woods, each contributing unique characteristics as the vinegar matures over years.
A highlight of the tour is a visit to our Balsamic museum, where you’ll dive into the history of the Sereni family, producers of Balsamic Vinegar since the early 1900s. Learn how the process has evolved while maintaining its roots in time-honored methods.
The experience culminates with a tasting of five exquisite Balsamic Vinegars, ranging from 8-year-old I.G.P. varieties aged in oak and cherry wood to the prestigious Traditional Balsamic Vinegar D.O.P. “Extravecchio”, aged over 25 years. You’ll savor these unique flavors paired with local specialties such as grissini.

Located at 350 meters above sea level, our estate offers the perfect setting for producing the finest Balsamic Vinegar. The tour begins with a stroll through our family-owned vineyards, nestled on clay-limestone hills ideal for cultivating Trebbiano and Lambrusco grapes, the essential base for our vinegar. You will learn about the terroir that shapes the flavor profile of the grapes and ultimately, the vinegar. From the cooling breezes of the nearby Panaro River to the rich soil, every element here plays a vital role in creating the perfect balance of sweetness and acidity.
Next, you’ll be guided through the production process, starting with the cooking of grape must, a crucial step that concentrates the natural sugars. You’ll see the special cooking room where the must is heated in open kettles to begin its transformation. From there, we visit the aging rooms, featuring two bottaie (barrel aging rooms), where the must matures for years in barrels crafted from various high-quality woods such as oak, chestnut, cherry, and juniper. Each wood type imparts a unique flavor and complexity to the vinegar, allowing it to develop the deep, rich characteristics that Balsamic Vinegar is famous for.
During the tour, we’ll also stop by our Balsamic museum, where you’ll explore the rich history of Balsamic Vinegar production in the Modena area. Learn how the techniques and traditions have been passed down through generations, from the humble beginningsin the early 1900s to the present-day operation, which includes over 1,500 barrels.
